Pat dry two pork tenderloins and season generously with salt and pepper. Brush with about 2 tablespoons of Dijon mustard, then sprinkle Italian seasoning all over. Heat an oven-safe skillet with olive oil and sear the pork on all sides until deeply golden. While it sears, quarter your Brussels sprouts. Add a little more olive oil to the pan, scatter in the Brussels, and transfer to a 375° oven. Roast uncovered for about 20 minutes, or until the pork reaches 145°. Let the pork rest a few minutes. Pour 3/4 cup half & half into the skillet and stir it around the Brussels, scraping up all those delicious golden bits.
