This dinner feels cozy and homemade but is secretly very easy. It uses Aldi's butter chicken simmer sauce as a base, enhanced with cream and extra spices, and features juicy chicken meatballs simmered directly in the sauce. Serve over rice, with warm naan, or enjoy straight from the pan.

For the chicken meatballs: In a bowl, mix 1 lb ground chicken, 1 egg, ½ cup ricotta, 1 cup breadcrumbs, ¼ cup chopped parsley, 1 tsp cinnamon, 1 tsp ginger, 1 tsp garam masala, and salt + pepper to taste. Roll the mixture into meatballs. Brown the meatballs lightly in a pan. Then, add Aldi’s butter chicken simmer sauce to the pan, along with a splash of cream and a few extra spices if desired, and simmer the meatballs in the sauce until cooked through. Serve over rice, with warm naan, or directly from the pan.
