Pat dry two pork tenderloins and season generously with salt and pepper. Brush with about 2 tablespoons of Dijon mustard, then sprinkle Italian seasoning all over. Heat an oven-safe skillet with olive oil and sear the pork on all sides until deeply golden. While it sears, quarter your Brussels sprouts. Add a little more olive oil to the pan, scatter in the Brussels, and transfer to a 375° oven. Roast uncovered for about 20 minutes, or until the pork reaches 145°. Let the pork rest a few minutes. Pour 3/4 cup half & half into the skillet and stir it around the Brussels, scraping up all those delicious golden bits. Slice the pork, spoon the creamy pan sauce over the top, and serve warm.
